Recipe:
1 cup + 3Tbsp. of Brown Rice Flour.
2 large eggs (I use Egglands Best Eggs only.)
2 Tbsp. Brown Sugar/ or Honey
2 Tbsp. pure chocolate chips (milk/soy free)
1/2 tsp. vanilla extract
1/2 tsp. baking soda
1/2 tsp. cinnamon
1 tsp. cocoa powder.
1/2 tsp. pumpkin pie spices
2 Tbsp. coconut oil, melted.
3 apples
I cut up the apples, which I used to replace the oil in the original recipe I saw in the book. Mashed Bananas would also work.
Preheat oven to 375.
Cut up the apples, drizzle some lemon juice on them and place them in a small pot to soften - almost to a chunky applesauce consistency.
Lightly spray a springform pan (I used coconut spray oil).
I used quite a few bowls, but they were needed and this worked.
In a small bowl, toss together the chocolate chips, some brown sugar, some cinnamon, cocoa powder, pumpkin pie spices, 1 Tbsp. of flour and melted coconut oil.
In another bowl, whisk together the flour and baking soda.
In another bowl, lightly mix together the eggs, than add the water, then add the sugar and then add the apples and vanilla. Stir into the flour mixture until combined.
Pour the mixture into the pan and sprinkle the chocolate chip mixture on top.
Bake for about 40 minutes, let cool, serve.
