Artichoke & Black Bean "Pies"



Artichoke and Black Bean "Pies"

Preheat Oven to 350.
Lightly Spray a Baking Sheet Pan and set aside.

Dice up about a cup of Artichoke Hearts and a Can of Black Beans.
Set aside.
{I've also made these with Chickpeas as well}

Combine all ingredients to form a dough.

3/4 cup of Almond Flour/or Brown Rice Flour.
1/4 cup of Coconut Oil/or Applesauce.
1 egg.
2 Tbsp. of Tapioca Flour.
2 Tbsp. of Coconut Flour.
(I use coconut flour as a "binding" flour, instead of xanthum/guar gum)
1/2 tsp. of Baking Soda.
Seasoning of choice - I used oregano, parsley...
pinch of salt and pepper.
2 Tbsp. (or more) of Mineral or Seltzer Water.

Add more Flour if needed for dough to not be "sticky" - form into balls, and
flatten between two sheets of parchment paper.
Roll into circles....
Fill one side with a few spoonfuls of artichoke/bean mixture and then fold over
to close the "pie".  My dough did not cooperate perfectly each time I did this, some of them were open in the center, but worked and tasted just as perfect!

Bake for about 23 minutes, until lightly browned.

Simple Almond Flour Apple Tart



Preheat Oven to 350.

Mix together 3/4 cup of Almond Flour,
1/4 cup softened (but not liquid) Coconut Oil,
2 Tbsp. of Palm Shortening & 2 Tbsp. of Honey or Agave.
Add a pinch of cinnamon or pie spices.

Press into Pie Pan.
Bake for about 10 minutes, until lightly browned and crispy.

In a pan, jus ton the stove top, place about 4-5 cut up apples
of any variety, with a Tbsp. of Coconut Oil. 
Cook until softened.  Add a Pinch of Cinnamon.

Add Apples to Pie Crust and Enjoy!

These are actually Chocolate Cupcakes made with Coconut Flour.
The frosting is some Powdered Sugar, Palm Shortening and
POM Juice (Pink!), just whisked until fluffy!

Apple Cinnamon Cupcakes, with Maple Frosting!



Cinnamon-Caramel Cupcakes

Preheat Oven to 375.
{makes 9 cupcakes}

3/4 cup of Almond Flour.
3 Tbsp. Tapioca Flour.
1 Tbsp. Coconut Flour.
(or, just 2 Tbsp. of Coconut Flour instead of the above two)
3 Eggs.
1/3 cup of Homemade Applesauce.
1 tsp. Cinnamon.
tiny pinch of Ginger.
1/2 tsp. Baking Soda.

Mix all dry Ingredients.
Whisk Eggs.  Whisk in Applesauce.
Combine.
Bake for 14 to 16 minutes.


Maple Frosting.
1/2 cup of Sifted Powdered Sugar, plus more as needed.
{Whole Foods 365 Brand is made without cornstarch!!}
1/4 cup of Palm Shortening.
1-2 Tbsp. of Maple Syrup.


Whisk palm shortening until fluffy and light, slowly add in powdered sugar and the maple syrup....add more sugar or syrup as needed until its a perfect consistency.
