White Sweet Potato Bread.

When I am tired and need quick recipes, I use Bisquick Gluten Free Mix, because its easy.  I found White Sweet Potatoes at Whole Foods several years ago, and fell in love with them!!  I found this recipe on Pinterest, and decided to play around with it using ingredients I can use and could put together quickly.  http://boyandtherabbit.wordpress.com/2012/08/03/sweet-potato-pull-apart-bread/


I should have baked it in a Loaf Pan, ooops.  I also should have taken the time to puree the Sweet Potato with the Coconut Milk.  Pure Laziness.  I started to get lightheaded standing at the counter & just didn't bother doing it.  It tastes excellent anyway!

White Sweet Potato Bread
Preheat Oven to 350.
Spray Loaf Pan with Coconut Oil Spray.

3/4 Cup of Unsweetened Coconut Milk
1 Cup of cooked White Sweet Potatoes
1 Egg
1 Cup of Gluten Free Bisquick Mix
1/2 Cup of Almond Flour
1 tsp. of Pumpkin Pie Spice or Cinnamon


Topping: Few Tbsp. of Brown Sugar/Turbinado Sugar mixed w/Cinnamon.

Whisk together the Dry Ingredients.
Puree the White Sweet Potatoes & Coconut Milk in Blender.
Add Egg, blend.

Combine all ingredients and Spoon into prepared pan. 
Use a Knife to cut slits in top of bread, and sprinkle top with Sugar/Cinnamon mixture.

Bake for about 20 minutes @ 350.
Slice & Enjoy.

Gluten Free Bisquick Mix Rolls


I've been having more and more days where I just don't have the energy to
measure out my Almond an Coconut Flours to make something I want to eat.  GF Bisquick is just quick and easy to use, and I never have bad results.  I love Rolls, but Gluten Free Rolls which do not contain cornstarch or other ingredients that I can not tolerate, are not only hard to find, but expensive.

I made two nice sized rolls from this recipe.

1/3 Cup of GF Bisquick Mix
1/4 Cup of Brown Rice Flour
1/3 Cup of Unsweetened Coconut Milk
2 Tbsp. of Palm Shortening
1 Egg

***OR***

1/2 Cup GF Bisquick Mix
1/2 Cup Almond Flour
2 eggs
1/4 Cup of Unsweetened Coconut Milk
2 Tbsp. Palm Shortening (optional)

***Either way works great.  They are just simple & quick GF muffins.***


Preheat Oven to 350.

Whisk the Egg in a bowl, whisk in the coconut milk.
Work all the other ingredients together and then add the milk/egg.

Form Rolls, cut slits in top, and bake for about 10-15 minutes.
Enjoy!
