Artichoke & Black Bean "Pies"
Artichoke and Black Bean "Pies"

Preheat Oven to 350.
Lightly Spray a Baking Sheet Pan and set aside.
Dice up about a cup of Artichoke Hearts and a Can of Black Beans.
Set aside.
{I've also made these with Chickpeas as well}
Combine all ingredients to form a dough.
3/4 cup of Almond Flour/or Brown Rice Flour.
1/4 cup of Coconut Oil/or Applesauce.
1 egg.
2 Tbsp. of Tapioca Flour.
2 Tbsp. of Coconut Flour.
(I use coconut flour as a "binding" flour, instead of xanthum/guar gum)
1/2 tsp. of Baking Soda.
Seasoning of choice - I used oregano, parsley...
pinch of salt and pepper.
2 Tbsp. (or more) of Mineral or Seltzer Water.
Add more Flour if needed for dough to not be "sticky" - form into balls, and
flatten between two sheets of parchment paper.
Roll into circles....
Fill one side with a few spoonfuls of artichoke/bean mixture and then fold over
to close the "pie". My dough did not cooperate perfectly each time I did this, some of them were open in the center, but worked and tasted just as perfect!
Bake for about 23 minutes, until lightly browned.
