Matzo Balls (via elanaspantry.com)

Because of my multiple food allergies and intolerances, I have to watch how I make everything.  Chicken soup is OUT because I really do not eat meat anymore, and many of the vegetables I used to love in soup, are out because I can not tolerate them.  I make "fake" Chicken Soup, using Chicken Broth, using Pacific Naturals Brand Low-Sodium Chicken Both.  I add in some Carrots and Celery.  And thats it. 

Matzo balls....I was so excited when I saw a post about them from Elana Amsterdam @ elanaspantry.com.  This is her recipe, but I cut it in half.

To make a Dozen small 1 inch ball Matzo Balls;
1 cup of Almond Flour
pinch of salt
pinch of pepper
1 tbsp. of Parsley or seasoning of choice.
2 eggs.

Whisk the eggs, add to the flour and seasonings.
Refridgerate the mixture for 2-3 hours.
When mixture is ready, boil a pot of water.
Roll the mixture gently and place in boiling water.
Allow to cook on a low simmer for about 15-20 minutes.

Place cooked "Matzo Balls" in the Pot of Soup and allow to simmer for about
20-30 minutes until ready to serve.
