Almond Flour Apple Crumb Cake


I have been reading through 'Cooking for Isaiah' by Silvana Narvone, and fell in love with her recipe for this Crumb Cake.  I made some adjustments using ingredients I prefer; and this cake is so good!!  Her book is a must read!!!  http://www.barnesandnoble.com/w/cooking-for-isaiah-silvana-nardone/1100733118


Apple Brown Sugar Crumb Cake

1 ½ cups Almond Flour
2 Tbsp. Arrowroot or Tapioca Powder
3 eggs
1/3 cup of Brown Sugar/White Sugar Mixed together.
pinch of salt
½ tsp. vanilla extract
2 ½ tsp. Baking Powder
2 tsp. Cinnamon
2 Tbsp. Coconut Oil
1 tsp. Cocoa Powder
4 small apples or 2 regular sized apples.
(peeled, cored, sliced)

Preheat Oven to 375.
Spray Spring form Pan with Coconut Oil Spray.
Whisk together Dry Ingredients. (except for ½ tsp. cinnamon, cocoa powder)
Whisk 1/2 sugar mixture, eggs, vanilla.
In small bowl, mix coconut oil, other ½ of sugar, cocoa powder & ½ tsp. cinnamon.
Mix Dry and Egg mixture together.
Pour ¾ of mixture into Spring form Pan.
Place apples gently on top of mixture.
Sprinkle with sugar, cinnamon, cocoa, coconut oil mixture.
Gently spoon the rest of the mixture on top of the cake.
Bake for 30 minutes.
