Every year since I was little, we always made the same Apple Pie recipe;
a no-fail, great crust recipe.
I can not have any of the ingredients, other than the apples, in that recipe, so I came up with a new one. This pie was excellent, and the crust was perfect & delicious!
Crust:
well, I forgot to write the recipe down....but it was basically just Rice Flour, Palm Shortening, Coconut Oil, Water, Vanilla Extract and Cinnamon.
Refridgerate until cold.
Preheat oven to 350.
I pressed it into the pie pan and up the sides of the pan.
Poke the crust with a fork all over.
Bake for about 15 minutes until golden brown.
For the hearts, I just hand cut the dough into hearts and baked them
on a baking sheet at the same time as the crust.
I lightly glazed the tops of the cookies and crust with a honey/water mixture.
Let cool.
Apples:
I used the Apple Peeler machine and placed the apples with a little water into
a pan on the stove top with the juice and zest of two lemons.
Zest some fresh ginger.
Add some spices of choice.
Brown Sugar, or Honey can be added.
I think I used a tbsp. of brown sugar, which helped thicken the liquid in the pan.
Cook until apples are how you like them.
Add apples to cooked pie crust, top with cookies.
Let sit until cool.
