Fig Cookies...
Fig Cookies
1/2 cup of Almond Flour
{plus about 1-2 Tbsp. for dusting the dough later}
3/4 cup of White Rice Flour
1/4 cup of Brown Sugar
1/4 cup Honey or Agave
3 Tbsp. of Palm Shortening
1-2 Tbsp. of Vanilla Extract
1 Pure Fig Bar - {Oskri Brand - Organic Fig Bars}
In a small saucepan, over low heat, combine the brown sugar and honey.
When the sugar has fully melted, remove the pan from the heat and add the vanilla.
Combine with the Flours and then add the shortening.
Form a dough ball, dust with the Almond Flour that was set aside and
refridgerate for about an hour.
Preheat Oven to 350.
Cut the Fig Bar into small square pieces.
Roll out the dough between two sheets of parchment paper.
Cut into squares, circles, whatever shape you like.
Place one fig square on top of one cut piece and cover lightly with another.
Bake for about 10-15 minutes - Watch Carefully, they burn quickly!
