Lemon Bars


Lemon Bars

Preheat Oven to 350.
I used an 8x8 baking pan.

2/3 cup of White Rice or Brown Rice Flour.
1/2 cup of Almond Flour.
1/3-1/2 cup of Palm Shortening.
{last time, I used a mixture of Palm Shortening and Coconut Oil}
1/4 cup of Agave.

Mix together and press into pan.
Bake for about 15 minutes.

Meanwhile, Zest 3 Lemons.
Add the Zest & Juice of the 3 Lemons to 1/4 cup of Agave or Sugar.
Mix in 1 whole Egg plus 2 Egg Whites.
Add about 1/4 cup of Almond Flour.

Pour Mixture into Crust, and then bake for another 15-20 minutes.
Refridgerate and Enjoy!
